Historian and author Paul Freedman, author of Ten Restaurants That Changed America and American Cuisine-And How It Got That Way will explore this question with author, journalist and dedicated foodie, Richard Morais. Richard has written the bestseller The Hundred-Foot Journey which follows the life of an Indian chef as he conquers the world of French haute cuisine. It was made into a major motion picture starring Helen Mirren.

Paul Freedman is a Professor of History at Yale University who is renowned for his work studying Medieval Europe. He has written more than ten books and numerous academic papers.He has brought his skills as a historian to the exploration of American culinary history

Richard C. Morais is an award-winning financial journalist and novelist. He is best known as the author of the New York Times and international bestseller The Hundred-Foot Journey, a culinary novel that follows the life of an Indian chef as he conquers the rarified world of French haute cuisine. In 2014, Steven Spielberg and Oprah Winfrey released The Hundred-Foot Journey as a film starring Helen Mirren and Om Puri.
